Kyoto tofu is the best in the world - perfected by buddhist monks over centuries. Tofu here is varied - from the skin (yuba) to the squares in broth (yudofu) - but never bland and dull. And this also has a lot to do with how Kyoto cuisine has elevated the use of the soybean. Michelin one-starred Ajiro is certainly the temple of buddhist vegetarian ("shojin ryori") cuisine with the foundation of its food being yuba, the tofu skin that Kyoto is famous for.  I've been here in both winter and summer and have enjoyed both visits immensely. This is beef, possibly at its utmost incarnation. Isshin presents the best parts of high quality Japanese cattle, from tongue to tail, in a variety of Kyoto kaiseki inspired interpretations including one that resembles the local sushi. Kyoto – One Day in the Eastern Districts

The main sites to visit in Kyoto’s eastern districts include the Shugakuin Imperial Villa, Ginkaku-ji (Silver Pavilion) and Eikando Zenrin-ji. The Philosopher’s Walk, is an easy path to stroll down, linking Ginkaku-ji to Eikando Zenren-ji and another temple Nanzen-ji. This makes spending one day in this area a nicely contained itinerary.

Kyoto: Soaking Up the Atmosphere of the Old City

If in your mind’s eye of Japan, you see old wooden structures lining narrow lanes and paper lanterns then Kyoto is probably the best place to find this. And specifically, the Kawaramachi and Gion areas in central Kyoto are great places to soak up the atmosphere of old Kyoto.
